Debih, the Chinese supermarket does a range of curry sauces. The most authentic is a bit expensive at £3.95 for a 400g tub, and the cheap ones are naff. When I want a really good Chinese curry I buy a middle range one and spruce it up with a splash of hoisin or Oyster sauce - or both.

However, that home made blend does quite well.

Do you have a Waitrose? They have an aisle dedicated to IndoOriental stuff. Some of their own brands are as good as the authentic ones.

I make a leek, bacon, cheese and pasta bake but it's one of those through in however much you want meals so there's no exact recipe, it's very quick to do though. Pasta can be substituted with sliced boiled potatoes if you have a bit more time.

LEMON CHICKEN

Olive oil
Juice 2 lemons
Garlic gloves..peeled (as many as you like..I use loads as they're lush roasted!)
Chicken thighs (or legs/fillets..whichever you prefer)
Potatoes..(save time, don't peel) just wash the skins, and quarter them
Green beans
Salt and pepper

In an oven dish place the chicken pieces over the peeled garlic. Add the potatoes and drizzle the olive oil and lemon juice over them. Season with salt and pepper. After about 3/4 hour add the green beans and lightly drizzle them with oil and lemon juice.
I usually serve with salad and crusty bread.

CHICKEN AND CHORIZO TRAY BAKE

Olive oil
Chicken fillets
Potatoes cut into chunks
Red onion
Chorizo
Dried oregano

Put a little oil on the bottom of an oven dish and rub the fillets in this oil. Arrange the rest of the ingredients round the chicken, sprinkle with just a little oil and season.
Add the oregano.
I tend to add mushrooms and big chunks of red pepper.
I usually serve with chilli infused rice and salad.

  (Looking at these recipes they look boring..but they are tasty.  )

Pasta is my fave thing to cook for the boys if time is really short ...as the pasta is cooking mushrooms, chorizo and peppers can be quickly done to go with it.

Hope these have helped. xx

Probably not - risotto rice is very specific to the style of cooking, otherwise you may just end up with savoury rice.

We recently got a slow cooker, and now Mr. Osc goes on a slow cooking frenzy every few weeks so we can always have stuff in the freezer, stew, bol sauce, chilli, that can be taken out the night before and then just need rice or pasta cooked on the day. It really helps, even when you are like us and not working, cooking can be a chore.
