Easy bread recipes please

Postby jenniren » 14 Jan 2013, 13:48

I got a lovely Tefal food mixer for Christmas, it's very similar to the Kenwood one but much, much cheaper.

Experimenting with making bread, with the help of the dough hook I hasten to add, no heavy kneading for me  We prefer wholemeal/granary/seeded bread. I've tried a couple of recipes off the flour pack using 7g quick yeast and they're okay but would love more ideas. Has anyone got a really fool proof recipe they use ?

I think Debih and Di are the ones with great bread recipes.

Actually...I'm glad you've asked this now Jenni as Debih gave me a really easy recipe last year which turned out lovely but I lost it.

It was on the old VV board so I can't retrieve it either.

I'll have a look tomorrow Jenni.

I have a few fail safe ones but haven't made bread for ages with the kitchen being in the mess that is in.

Soda bread is really easy and you don't have the faff of waiting for it to rise. And I have a weird bread recipe that you can make up a big batch of dough and keep it in your fridge and just shape and bake it when you need it. One batch makes four loaves of bread. Its the one I use the most - but be aware that you need a decent size fridge as you need to keep it in a bucket/big bowl in the fridge.

But I have a decent "normal" fail safe recipe. I'll make sure I put it on tomorrow night when I have hunted out my recipe book.

I have used this one Jen, and for the initial mixing I used the dough hook on my hand mixer. I know Mr H says to use your fingers, but hey! :D

I don't see a way around the kneading, unless a bread maker is used - that goes for any bread. Cutting the white flour with wholemeal should not be too much of a problem, nor should adding seeds/herbs or even fruit.

One of my recipes needs hardly any kneading at all. You just mix it up and leave it and then slap it about a bit at the end.

I'll look it out tonight.
