..... a beetroot jelly !

Mrs O won a hamper at the local church fete! Don't get excited, it was hardly quality, the star attractions included a small tin of chopped tomatoes, a packet of Batchelor's chicken Cuppa-soups and a tin of Sainsbury's vegetable soup - and three items which were way beyond their Use By dates, which we've now thrown out! :lol:

But one thing in there was a traditional packet of raspberry jelly, so, as we've got a jar of baby beets, Mrs O summoned up the memory of one of her Mother's old recipies, and we've now got a pint earthenware jug of beetroot jelly cooling off, which hopefully will set in the fridge overnight, and will be served as a delicacy with tomorrow's turkey! :D

Could you let me have the recipe sometime Ossie (no rush as I won't be doing it tomorrow!). I have some of the non pickled packets of beetroot and don't know what to do with them.

Hi Debih - this is ye ancient Nanny recipe:

1 pack (block) Hartleys raspberry jelly
8 Asda small beetroots from the jar
100ml red wine vinegar
water

Cut the block of jelly into individual cubes and add to 285ml boiling water to dissolve (this is as per the instructions on the packet). Do it in a 1pt (=520ml) jug.

Rough chop the beets into small chunks

Slosh 100ml red wine vinegar into a measuring jug, then add 135ml cold water

Once the jelly has been fully dissolved, add the chopped beets, then the vinegar and water mixture. Stir it all in well.

Allow to cool, and when cool, put it in the fridge to set.

Well that's the theory. And that, as we used to say in Somerset, it's where we're now to! It's in the fridge.

I'll let you know tomorrow morning if it HAS set.

If it hasn't, discard this recipe !!! :lol:

please let me know if it did taste as good as you expected Ossie - I love beetroot so another way of having it will make a nice change

It tastes fine, Meriad, perhaps a bit sharp (cut down slightly on the vinegar?) Probably one of those recipes you can tinker a bit with "to taste" .....

I had some with the Xmas Day roast rather than cranberry jelly, and today with some pork pie. The raspberry flavour does come through as well as the beetroot. We've probably eaten about half of it between Mrs O and myself.

Mind you, Master O won't go within a 1,000 yards of it ... :lol:
