Saundra my MIL is exactly the same as you - she cooks most days but sometimes it's just an egg on toast or something very simple......

I've lived alone before now and often a poached egg or cheese and bikkies and some fruit sufficed 8-) ;) xxx

I lived on my own for 4 years, I did cook but not every night. I was working 50+ hours a week in a very high-pressure job, so sometimes cooking was a nice way of relaxing, other times I was too knackered to bother :D
Most weeks I cooked a chicken, then there was always something there for a hot or cold dinner, or sandwiches. I also did my own version of ready-meals, you know, once in a while make bolognese sauce, chilli, shepherds pie, and have portions in the freezer.
Friends used to come at least once a week, too, some from work never cooked for themselves at all :D

We're all different - I don't enjoy cooking, I do it because I have to feed my family not because I enjoy it ;) I did use to enjoy baking but don't really do that much any more as I tended to eat too much of it....

I agree it's a bit more fun in winter though, and I do like my slow cooker. We're living on salads, lots of it home grown, BBQ'd meat, and good bread and cheeses etc at the moment....I haven't even cooked a roast for weeks
