225gms peeled potatoes (waxy was recommended but I just used ordinary)
2 medium onions peeled
150gms bacon, finely chopped
50gms SR flour
Salt
Black pepper
2 beaten eggs
Good scoosh of oil
Grate the potatoes, squeeze out all the excess water and place in a bowl. Grate the onions and add to the potatoes with the bacon, flour and seasoning. Mix this together very well.
Add the eggs to this mixture.
Heat the oil in a large frying pan. Put tablespoons of the mixture into the pan and fry gently for 5-8 minutes, turning once and making sure cooked through.
Drain onto kitchen paper and serve immediately. I served it with fried eggs and sausages.
Dead simple but dead tasty.
As Conor said..they were eaten so quickly they didn't touch the sides!
Added to say I added a few chilli flakes to the second half of the mixture.
