Pasta with chorizo and cream

I'm doing this for dinner tonight, it's really simple and family favourite here :D

Serves about 6 people

25 g butter or olive oil
1 chopped onion
700 g fresh, ripe tomatoes, peeled and roughly chopped – or 2 x 400g tins of tomatoes (I used fresh)
4 cloves garlic, grated or crushed
2 tsp chopped rosemary
sugar
225 g chorizo, sliced into ½ cm rounds
dried red chilli flakes (I used about half a teaspoon)
175 ml single cream
2 tbsp chopped parsley
500 g farfalle, rigatoni or penne
4 tbsp grated parmesan


Method
1. Melt the butter or olive oil in a large saucepan and add the chopped tomatoes, onion, garlic and rosemary. Season with salt and pepper and a pinch of sugar. Cook the tomatoes until they have begun to soften, or for about 5 minutes.

2. Add the sausage to the pan with the chilli flakes, cream and half the chopped parsley. Allow to simmer with the lid off until the mixture has reduced by half, 10-20 minutes, stirring frequently. Take off the heat and check and adjust the seasoning.

3. Meanwhile cook the pasta in a large pan of salted boiling water until it is slightly al dente (8-10 minutes). Once cooked, drain and toss with the sauce.

4. Plate the pasta in a big serving bowl and scatter with the grated parmesan cheese and the rest of the parsley and serve immediately.

This is almost the same as I make Loz..it's delicious, isn't it? My lads love it. nom nom

Chorizo is just so tasty. :D :D :D

Lovely thank you, there is half a chorizo left so I was tempted to make your recipe, but Tim apparently isn't over fond of chorizo

but it's gone in the summer in winter chicken anyway

Oooh Loz, that looks lush.

Chorizo is a firm favourite hereabouts.

I am on a home-made pizza diet atm, and chorizo beats pepperoni hands down.

The guys in Leeds meat market do the real deal, but Huge Fairly-Wettinhimself's fridge recipe is not bad. http://www.channel4.com/4food/recipes/c ... izo-recipe

I tend to use chilli powder rather than the sweet smoked paprika... and lots of it. :o :lol:

WM...how much is chorizo where you shop?

Do you buy the chorizo sausage or already sliced.?

Bb has been having chorizo on his pizzas too, while I've been having prawns, anchovy and capers ;)

Chorizo varies such a lot here. Morrisons do a nice one, a whole ring, 'produced in Spain from Spanish pork', 225g, for £2! It's a cooked one, whereas the ones from Lidl are not, but I don't think are quite as nice.
Morrisons also have the small, uncooked ones, 6 or 8 in a pack, not sure how much but we've not tried those yet.

In the market it is £2.40 for a huge ring.... and it is hot, hot, hot.

But in an emergency my version of Huge's version makes good chorizo mini meatballs for a pizza or a submarine sarnie.
