I think grating it first before freezing it is a good idea. I love cheese, so find if I grate it I can use less...it's all in the mind :lol:

Vic, I won't shop in Continente any more, they are just too expensive.

And the cheese we bought was for the same price, but 50g bigger :D

I buy a 1kg block of cheese, chop it into thirds and freeze it. Have done for a few years now. It defrosts fine, and is hard to tell what block is fresh vs the come from freezer block. I put mine in a zip lock bag as it seems to keep it fresher for longer in the fridge so freeze them in that for convenience.

I always keep a pack of cheddar in the freezer, just in case we run out - which would be a tragedy in this house :roll: :lol: I have also frozen goat's cheese and some soft French cheeses - not sure if that is the done thing with the soft cheese, but they taste fine afterwards :? :D

Oh yes Kaz it is. Some people for instance buy brie a few weeks before Christmas, get it to the exact stage of ripeness they want, and then freeze it, because it comes out of the freezer just the same as it went in :)
I've even found you can freeze parts of mozzarella balls and they're fine too :)

All cheese for me except perhaps Edam for me and the riper the better. :D Find though it tends to crumble after being frozen.

What a good idea! I buy packs of cheese, cut them in half and freeze one half, use the other, every time :D
