Fishcakes or vegcakes

For a snack meal.

Couple of med peeled and boiled potatoes, dry mashed - no milk or butter.
Cooked fish, about half the volume of the spuds - salmon or mackerel are good but any fish will do.
1 egg yolk - keep the egg white for later
S&P
Oil

Let the mashed spuds go cold then mix everything together in a bowl. Form into cakes and shallow fry on both sides till browned.

For vegcakes replace the fish with equal quantities of peas, sweetcorn, chopped fried onion and chopped mushrooms - to half the volume of the spuds..

For a crispy outer beat the living daylights out of a ryvita in a strong bag then use the egg white mixed with a bit of water as a pre-coat.

Will be trying the veggie one WM - I keep forgetting about fishcakes :oops: :roll:

My children were addicted to them when they were younger, especially the veggie ones. :lol: 8-)

They are a quick, filling and cheap when teamed with beans or dips.
