Warning for budding jam makers

I was making onion marmalade as per Debih's recipe. Everything was going fine and it was thickening up nicely.

It was still at the stage where drawing a spoon across the pan had the mix closing back up. Then nature called for a number 1 and I had to go - less than two minutes.

In that time it caught and burnt. That is how quick a disaster can happen.

The lesson? Once the jam is nearly there do not turn your back on it for more than a second.

I never ever leave the kitchen when I'm jam making. It can all go wrong so quickly!

Did you manage to rescue the onion marmalade?

Nah, I had to start again. :lol: :lol: :lol:

Burnt jam is burnt jam... but only some sugar and cider lost. The second lot was fine...I added some chilli powder. Cracking!

Phew Ally, you can rest assured. Just had a look at the recipe on the other thread and it's cider vinegar, not proper cider ;)

I used real drinkable cider.... then it went in the bin. :roll:

Hmmm yes but there is sugar in cider, so maybe that was a contributing factor? I'll stick with the vinegar ;) :lol: :lol: :lol:

You need the acidity from the cider vinegar.
