Any jam makers out there?

I lost my recipe for onion jam, but found one for chilli jam.

The trees and shrubs are looking good for fruits this year. Within a couple of hundred metres there are pears, crab apples, blackberries, bilberries, sloes and hawthorn berries. Any ideas?

I have a fab onion marmalade recipe.

Tell me what you're picking WM and I'll find you a recipe!

Pear cheese is lovely. Crab apple and mint jelly. And I have tried and tested recipes for blackberries, hawthorn and sloes. Not done anything with bilberries but have recipes.

Crab apples, blackberries and pears, once they drop, will be on the cards. Sloes are a maybe. We used to go 'combing' for bilberries, but you can end up a right mess, so maybe not.

Debih, do you have a good recipe for green tomato chutney? There are loads of green toms in the greenhouse, and D and I both fancy some chutney. She used to have a recipe but can't find it. I'm going to try my hand at it :D :lol:

OK - WM

These are the recipes I have (and have done before)

Pears

- spiced pickled pears
- plum and pear chutney
- mulled pears

Blackberries

- blackberry jam
- blackberry and apple gin
- blackberry butter
- hedgerow jelly
- bottled blackberries

Crab Apples

- crab apple jelly
- pickled crab apples

Sloes

- sloe gin or vodka (once done I then use the sloes for jam making)

I also have plenty of recipes that I haven't tried before if you don't fancy any of the above. (I haven't typed any of the recipes up until you say if you fancy them!!)

I also have the River Cottage Fruit book which is bound to have some recipes for pears and blackberries in.

Debih, I have been reading the tomato chutney recipe (one for later) and assume the process is much the same for most jams as well. With the onion and chilli jams I use the 'drop some on a cold plate' method.

So...

Plum and pear chutney
Blackberry jam and
Crab apple jelly
please.

I intend to use crab apple skins for the pectin as there are tons of them about, though I can get jam making sugar if essential.
