Steamed some potatoes, left them to get cold, then sliced them and fried them in sesame oil, along with red pepper and onion. Added local sea salt and parsley, just before dishing up.
In a small dish, lobbed in shredded lettuce, grated carrot, 2 sliced boiled eggs, half a tin of (rinsed) black beans, a handful of cherry tomatoes, chopped up, drained tin of tuna in brine and poured a mixture of olive oil and white wine vinegar over the top.
A variation of Nizette's tuna salad.
