A tip for you home made pizza makers

Postby Workingman » 04 Apr 2015, 15:07

I always make my own pizza, and use mozzarella, but it can be a bit of a faff, so....................cut the ball into quarters and slice them using a boiled egg slicer. Simples! ;)

I have also got a curved rolling pin, it is slightly thicker in the middle. It makes it dead easy to roll the dough into a circle.

Guess what I am having for tea? :D  :D

And a wit to match. ;) 8-) :o :P

So, here's a recipe for those who want a pizza for less than £1

Dough.

500g of bread flour, or a 50:50 mix of white and wholemeal
300ml tepid water
1 Tbs oil
1 x 7g sachet of dried yeast
1 tsp salt
1 tsp sugar

Mix all the dry ingredients. Add the oil and slowly pour in the water whilst kneading for 10 mins or till the dough is shiny and elastic. Set aside, covered, for at least an hour in a warm room. Knock the dough back and cut into five equal portions, these can be immediately frozen for later use if placed in lightly oiled bags.

Form the dough into a ball and on a well floured worktop roll out into a 'circle' about 12"/30cm. This will make a thin and crispy pizza. A 10"/25cm circle will be more towards a deep pan pizza. Place on a floured baking tray and layer on your tomato sauce and topping of your choice. Bake in a pre-heated oven on its highest temperature for about seven to eight minutes or until the cheese and topping have cooked.

Sauce.

500ml passata or a tin of tomatoes and 1 dsp tomato puree
3 chopped garlic cloves
1/2 finely chopped medium onion
1 tsp sugar
1 dsp oregano
1/2 tsp basil
drop of oil
seasoning

Saute the onion and garlic till soft then add the oregano and basil and cook for a further minute or two. Add the passata and blitz with a whizzer thingy. Slowly heat through and add the sugar, then season to taste. Leave to cool. The sauce can be portioned and frozen till needed.

Get cooking. :P :P :P
