Can I have some advice please

Postby miasmum » 14 Mar 2015, 10:03

Yesterday I made this
http://www.bbcgoodfood.com/recipes/6303 ... cken-balti

but I bought the wrong quinoa, I bought ready cooked so it didn't absorb all the liquid. I added a mug of rice and now all the liquid is absorbed.

But, I made it yesterday to eat tonight, as it says it is better the next day. But storing and reheating rice isn't a good idea is it? I didn't think of that when I did it. Plus there is no liquid now, so it will dry up when I reheat it.

Not sure whether to chuck it and start again?

Add another cupful of stock and reheat, just make sure it gets very hot, up to the boil, and it will be fine! I don't know where this thing about reheating rice came from, but have seen it mentioned once or twice lately......I've never had a problem!

Uncooked rice can contain spores of bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will multiply and may produce poisons that cause vomiting or diarrhoea. Reheating the rice won't get rid of these poisons.

Thanks both. Not risking it, it's gon down the waste disposal and I will remake with the correct quinoa. What a flipping waste of time and money. I hate cooking

Well I've reheated rice dishes all my life and never had a problem - in fact I have never had food poisoning of any sort. What a waste :(

Neither have I Kaz, but a quick search of the Internet convinced me it wasn't something I was prepared to risk  As Rodo said it's not the reheating that causes the problem but the storage before. Rice should be cooled as quickly as possible and put in the fridge for storage. This had already been out for 3 hours and was still not cold enough to put in the fridge. They now reckon a lot of food poisoning from buffets is not down to chicken etc as previously thought but rice salad or large pans of rice for chilli or curry

Fair enough. The internet seemed 50/50 those who had suffered and said was worst food poisoning imaginable and those like you who said been doing it for years. So who knows :?

It's well known and has been for years that rice from eg Chinese restaurants can cause problems, and at buffets, if they're not careful.
But a domestic kitchen is not the same, any dish cooked then fridged and re-heated should be fine unless it's been in a warm kitchen for ages
