Filo Apple and Mincemeat parcels

You can make 18 of these from the Jus Roll packs of 6 sheets of filo.

So you need:-

Jus Roll Filo pastry (defrosted)
3 smallish eating apples, peeled and sliced. then zapped in microwave for 2 mins
Melted butter, low fat spread or low cal spray
Mincemeat
Icing sugar

Separate the 6 sheets of filo, brush each with the butter or spread, then double them up to make 3. Cut each of the three into 6 rectangles, then place a slice of apple in the middle of each, then a generous teaspoon of mincemeat. Scrunch up each parcel so the filling is covered, brush the outsides with the fat again, then bake in a med hot oven (180 on fan electric) for approx. 10 minutes until golden brown. Remove from oven then sprinkle with icing sugar whilst still hot :)

Was it Jamie who did a similar thing but with two squares of filo turned to make an eight pointed star then placed in the molds of tray?

They looked pretty good as an alternative to traditional mince pies.

I don't tend to watch cookery programmes aside from GBBO and River Cottage, so I don't know Frank.

I cobbled these together as I was asked to bring in some low pro pointed nibbles by the class leader at Weightwatchers. I've made apple and mincemeat in the past, but with shortcrust, and these were a brainwave :)

They are 2 pro points BTW :oops:

They went down a storm at the meeting, they all got eaten and there was nearly a dust-up over the last one :oops: :lol: :lol:

I wasn't being picky, Kaz, I reckon that these things make a delightful difference from the traditional fayre.

I do bet that they did go down a treat, and will do so again.
