Chicken breasts on the bbq

We do a lot of bbq'ing, mostly half a chicken or prok steaks, but I'd like to try something different.

Could I marinade some chicken breasts, or put other stuff with them, then wrap them in foil and cook them on the bbq?

Any ideas you lovely cookerery people you? :D

Of course you can :)
I wouldn't ever wrap them in foil though, just don't have them on the hottest part.
If you beat them out you can cook them on the hottest bit, just a couple of mins per side.
Or cut into cubes, marinate then put into skewers.

Bottled piri-piri (or homemade of course) with either lemon or orange juice plus oregano is lovely.
A dry mix of spices/herbs is good too, mix it up and rub it well in.
Or mix hot curry powder (assuming you haven't got tandoor or tikka powder/paste) with plain yoghurt (can't remember if you can get it). First sprinkle chicken with lemon juice then sit in the yoghurt mix for a couple of hours (at least).

A lovely Thai recipe mixes crushed black peppercorns, coriander seeds, brown sugar, fresh chillies, chopped fresh coriander & lemon or lime.
Obviously these ideas are also fine for half or whole chickens too :)

I am definitely with Di on this, esp the cooking on a cooler part of the BBQ. Keep turning regularly if it is starting to char but is not cooked through, or take it off to rest then go again after five or ten minutes.

For a marinade just about anything goes, same with a dry spice rub. Just leave the chicken in the fridge for a while to absorb the flavours.

An alternative to beating them flat is to butterfly them - cut them almost through from side to side then open them out. You could also make breast pockets in a similar way, which you can fill and then skewer closed. Another idea is to score them diagonally almost half way through, then turn and do the other side with the scores running the other way. This is a great way to get a marinade or rub deep into the chicken.

If you already do half chickens why not try a spatchcock whole one?

We have spatchcock chicken all the time - and our "new" bbq means it's blinkin' hot - hence me asking about foil.

Di knows we tried and have had skewwrs before, but Grumpy is the cook :cry: :roll: :roll: and fusses far too much.

If we use the proper bbq, then we can lift or lower, as required, but not on this one - it's local one - ie - charred, if you're not quick or semi-charred, if you are :roll: :roll: 8-)

I'll experiment this week-end :D :D :D

The only thing I like to cook in foil is fish, where it gets direct heat and steam, though it is useful for keeping bits warm on the side of the barbie without them continuing to cook over the coals.

As for the other thing, why don't you do the prep and leave Grumps to do the "man" thing. :lol: :lol: :lol:
