Ideas please

Next week school are hosting a fell race - well, not hosting it as such but they are starting and ending at school. The head arranged it last year (it happens every year but has always been hosted by a local hotel which has now closed down) hoping that the PTA would organise the refreshments that can be sold at it. But the new PTA are such a shambles we have decided that the staff and governors will do it. Last year 100 people took part in the race and many of them bring along family and friends who wait at the venue for them to come back - ideal money making opportunity for the school.

We were going to ask parents to make and donate cakes to sell as part of the refreshments but the PTA have at last managed to organise something - a bingo event for this Friday and have asked parents to make cakes to sell to each other at that. So I have asked governors and their other halves and one or two hand picked parents (ie - the old PTA!!!).

I want to make something but don't know what. It happens on Tuesday night and I am working Monday morning, shortlisting for interviews until god knows what time Monday afternoon/evening, chauffering S to and from cadets on Monday night (Mick is away) and working all day Tuesday so whatever I make I need to make on Sunday.

I was thinking fruit cake but I don't want to be spending loads on ingredients and it isn't something I am used to making - we don't tend to eat fruit cake in this house.. So I am after ideas of things that I can make easily, preferably things that are easy to eat standing up and will still be okay on the Tuesday evening which can be made on Friday, Saturday or Sunday.

Any ideas anyone?

Just thought - it doesn't have to be anything sweet. It could be savoury. Just as long as it can be eaten cold and by hand!

Debih, as there are going to be lots of cakes how about something savoury along the lines of giant vol-au-vents with various fillings or that pizza bread Di mentioned? viewtopic.php?f=7&t=1631

I made some of the bread buns and they were delish with a capital D. ;) :D I am sure that other pizza style toppings such as piri-piri chicken pieces or bacon would work as well.

how long would savory scones keep for? or butter / cheese sticks?

I have decided to go for savoury so its just finding something now that I can make on the Sunday afternoon that will still be okay for the Tuesday evening.

I like the vol au vent idea but at the moment am swaying towards sausage rolls. I would have thought that I can get everything ready and then either bake them late on Monday evening or even try to get home early on Tuesday to bake them then. I can use shop bought pastry and get the sausage meat all herbed up and ready to go on the Sunday afternoon. I might make some mini cheese pasties as well - I wonder if I could make them on the Sunday, freeze them and then defrost and reheat them on the Tuesday?
