(Actually, they did during the first Covid lockdown when flour was in short supply, but I think they were selling it at £3 a bag or something. It was, however, being sold through local shops, and maybe "localism" in food supplies may be the long-term way forward - if you can afford it ....)

Remember there is a difference between "we source 70% of our flour from X" and "We have no choice but to source 70% of our flour from X".

My take is the first. I recall Tesco saying they were going to source their baguette flour from France to make it more "authentic". Reality being far from their "Authentic". Our Baguettes locally run the gamut from light and fluffy to "rustique" which is thick and stodgy.
