Yum sounds good Saundra :D We had chicken curry - we've eaten a LOT of salad stuff recently and fancied a change ;)

To be honest kaz the weather here is so dull and dark salads are out :lol:

Sort of aubergine parmigiana but with variations - garlic & herb cream cheese spread onto the grilled aubergine slices, spinach and mushrooms added to the tomato sauce...best go and make it :D
Bb will make the garlic bread ;)

Mmm Di, I might try that if the aubergines in the greenhouse ever ripen! Tons of cucumbers this year (anyone want one??? :P ) but the toms are all still green and my poor aubergines are very small!

Saundra we have had some nice weather, but the last few days have felt a bit autumnal :roll:

We went down to the bar - Grumpy had his very grumpy head on and I needed a break.

Various friends arrived, he got happy ish :roll: :roll: 5 beers and then wine...................

We're now having cold chicken and frozen chips :roll: :lol: :lol:

It was a huge success Kaz, really scrummy.
We have the parmigiana sometimes as a fast day dinner, but it's a bit 'light' for other days.
The garlic cheese spread on the aubergine slices (then make the slices into 'sandwiches'), and the additions of mushrooms, pepper and spinach to the tomato sauce made it into something really, really gorgeous :)
