Goats' cheese tarts

The tarts I made for our starter on Christmas Day were just squares of puff pastry, with a cut 1cm from the edge, all the way round, to make the raised edges when they cooked. I caramelised a load of sliced onion, half a dozen smallish ones, with about an ounce of butter, put the lid on a frying pan until they softened then added a little sugar, just 1tsp, until it went brown. They went into the middle of the pastry squares then slices of the cheese.

I did make a couple of them with brie instead as B and H don't like goats' cheese. A sprinkle of thyme on the top and into a hot oven for 10 minutes! They were super-delish but with hindsight I would have cooked them fresh on the day and eaten them straight from the oven. I cooked them in advance on Christmas Eve and reheated them, which was fine for the taste but the pastry was a little too crumbly with being reheated! Still, they were a hit :D I got the recipe from the BBC Good Food website :)

I like the look of those, but would have to change the type of cheese to something like Edam or Cheddar. They might also work as an idea for Ria's ham question, with ham replacing the onions.

I could easily see myself having either version for lunch with a bit of salad.

I think they need the onion, but could see some chopped ham mixed with a grated cheese working ok :D

They were nice Ria, and as Frank said, they would make a nice light lunch with a salad ;) :)

and easy to make which is right down my ally. I love cooking but it's a chore doing it for myself only so end up with the same thing over and over again. Will definitely get a roll of puff pastry when I next go shopping and then make some of these

Those cases are looking quite versatile.

I have been thinking of fillings such as good ol' cheese and onion, cheese and ham, a pizza influenced one, various other fillings with a breadcrumb crumble topping...... :D :D :D

I think what I'm going to try doing is buying a few sheets of the ready rolled puff, cutting them into squares and then freezing the squares so I can take them out individually as and when needed.... given they really don't take that long to cook it's a perfect dinner for me; come home, take out a square so it can start defrosting, feed the cats, sort a few things and then get the square(s) into the oven

I'm liking this idea :D
