There are loads of variations; instead of potatoes you can have it on a base of rice noodles (with an oriental-type dressing), or with beansprouts on top, with prawn crackers...it doesn't need meat but is a good way to use up little bits of leftover chicken too :)

If you do it, make the sauce a while ahead as it thickens a lot as it stands; use water to thin it down.
Make it in the microwave, it's much much easier than any other way.
