Blackberry jam

1kg blackberries
1kg granulated sugar

Put the fruit in the pan, bring to a simmer until the juices begin to run (approx 10 mins).

Add the sugar. Stir gently until completely dissolved. Bring to a rolling boil and boil for 5 mins, removing any scum.

Test for a set. If necessary continue to boil testing at 1 minute intervals.

Remove from heat. Remove any scum. Allow to cool briefly before putting into sterilised jars. (approx 6 x 225ml jars)
