Hmmmm, chicken soup.

There was a 1 kg tray of chicken wings in the reduced section for £1.18 so.....

I gave them a dry rub of salt, pepper and a few herbs then roasted them in a hot oven. Whilst they were roasting I sautéed some celery, onion, carrot and mushroom chunks in butter and oil. The roasted wings were put in the pan with the veg with a litre and a half of chicken stock and left to boil for about two hours, then drained through a sieve into a bowl.

I made a roux with butter, flour and milk, then added the chicken reduction and brought to a simmer to make a thickish soup.

Guess what's for tea? :D :D :D

I wouldn't make them into soup, we'd just eat them :)

Actually we're having chicken wings for dinner, I remembered a bag of them in the freezer, hot and spicy, from Lidl ;)
Perfect - chuck in oven, add wedges (or if energy make potato salad), and make some sort of slaw from carrots, celery, peppers and red onion :)

I like chicken soup, sounds nice Frank :)

I find chicken wings a bit fiddly eating TBH ;)

Di, there were too many wings for one person and my freezer is full, but soups can be heated daily and stay fresh - I learned that from Ken Hom and grandma. I did eat the meat from four of them. ;)

Kaz, I do not know what the weather is like down your way, but there are days up here when soup does the job. :roll:

One of those Marmite things I reckon Kaz ;)

I am fussy though, don't eat the skin unless it's really crispy and then not a lot - and don't like drumsticks, they have those horrid sinewy/gristly bits in :evil:
Hate fat/skin/gristle in my mouth, puts me right off :)

Now here's a thing.

Wings, done crispy, give more skin to meat ratio than other parts of the chicken, and I like that. :D :D :D

I am not into getting all the chicken skinless so it's 'healthy', I want some tasty but unhealthy bits every now and then. :lol: :lol: :lol:
