Pickled onions

A lovely neighbour has just given me a bag of shallots and I have decided to pickle them. I have never pickled onions before so could anyone offer me some advice please ? :D
Some recipes say I need to soak them in brine for a couple of days and others say I can just cover them in salt then leave them overnight :?

As far as I can remember, you can get some pickling spices and vinegar in the supermarket. Or make your own - bu I can't remember what they are, been a long time.

You'll need a screw type jar, peel the onions, chuck in the spices and leave.

But no doubt some-one will come along and tell me I did it all wrong 8-) and tell you how it's done properly ;)

Throw them in the bin, Loz, pickled onions are the Devil's food.

Or you could sauté them and then blitz to make an onion curry base.

Thanks to some of you...slapped legs to one in particular :P
There are loads of recipes, but I was hoping for some VV pickled onion expert with special salting knowledge :lol:
Well I have decided on this recipe

Sorry Loz I've never pickled anything - except probably my liver ;)

Debih's probably an expert but BBC food recipes are usually pretty reliable :)

The suggestion about frying the onions and blitzing them is serious..... if you make curries. They add a sweetness and creamy texture and a depth of flavour. But if you are not a curry fan it is a waste of time. ;) :lol: :lol:
