Easy dinners please

I hate trying to think what to do for dinner every night. So any ideas of easy dinner greatly appreciated. They can be slow cooker recipes, provided that don't take any preparation just chuck it in.
By the time I have sorted the animals, had a shower, got dressed, packed my lunch, emptied the dishwasher and the washing machine I don't have much time in the morning.
At night I get home about 5.30 and Tim gets home about 6.30 so anything quick and easy would be brilliant.
I always fall back on the boring, chicken in sauces, pork chops, stir fry etc

Tray bake chicken.
Pasta meals.
Lemon roast chicken.
Curry.
These are all really quick and dead tasty.
I'll be happy to post any recipes for you.

Quick and Easy Paella. Serves 4
1 tbsp oil
1 leek or onion, sliced
110g chorizo, sliced
1 tsp turmeric
300g long grain rice
1 litre fish or chicken stock
200g frozen peas
400g mixed seafood (either frozen or from the chiller cabinet in the supermarket)
Soften leek/onion in the oil for 5 minutes. Add chorizo and fry until it releases its oil. Add turmeric and rice. Stir and add the hot stock.
Boil and simmer for 15 mins. Stir occasionally.
Add frozen peas. Cook for 5 minutes. Add seafood and heat through for approx 5 minutes.

Oven baked risotto - serves 4
250g chopped bacon
1 onion, chopped
25g butter
300g risotto rice
1/2 glass white wine
150g cherry tomatoes, halved
750ml chicken stock
50g grated parmesan
Heat the oven to gas mark 6/200 deg
Fry bacon til crisp. Add onion and butter and cook til soft. Add rice. Stir. Add wine and cook for 2 mins until absorbed.
Add tomatoes and stock. Stir. Cover with a tight lid and bake in oven for approx 20 mins.
Stir parmesan through before serving.

Summer in winter chicken (our favourite quick dish). Serves 4
1 tbsp oil
4 chicken breasts, left whole
200g cherry tomatoes, halved
3 tbsp pesto (I always end up adding more though)
3 tbsp creme freche (again, I always end up adding much more)
basil
Heat the oil. Fry the chicken until slightly coloured. Season
Add tomatoes to pan. Stir and cook for a couple of minutes. Reduce heat and stir in pesto and creme freche (I always find that just 3 tbsp of each doesn't give enough sauce so just add to the consistency I want it to be).
Scatter with basil leaves.

There's more - I told you I'd got loads.
Pork Strogonoff Serves 2
250g sliced pork
1/2 red onion
2 tbsp paprika
1 clove crushed garlic
85g mushrooms
125ml single cream
Fry the pork. Remove and keep warm.
Melt 25g butter and fry the onion and paprika for 2 mins. Add garlic and mushrooms. Cook for 5 mins.
Add cream. Season. Put pork back in pan to warm through.

Gosh Debih..I remember YEARS ago asking you for this recipe from the old DM boards.
It's been a favourite in our house ever since.

Creamed chicken.
This is a fab way to use up left over cooked chicken. Sometimes I add ham to it too. We usually have it with either rice or chips. The girls love it (even the sausagtarian Lucy).
8 oz cooked chicken, shredded
1 oz butter
1 level tbsp flour
1/2 pint milk
1 egg yolk
2 tbsp cream
some frozen peas
Melt the butter in a pan. Add the flour and make a roux. Slowly add the milk, beating well to get a smooth sauce. Bring to the boil, season and simmer for a couple of minutes.
Blend egg yolk with cream. Remove pan from heat and stir egg/cream through mixture. Add chicken and peas. Warm through but do not boil.
