Turkey or Chicken burgers

I've made all sorts of these, but last night had turkey breast mince and did this Ainsley Harriott recipe.
They were really, really yummy - a few cals less I think for turkey breast than chicken but not many (I'd thrown the wrapper as it was a 500g pack I'd split in two and frozen).
We did half the recipe and it made really big ones - easiest if you put the portions between clingfilm and even it out. You want them quite big and flattish,
You'd never guess it was a fast day, except we didn't have chips :D
Actually you could have a few wedges done in the oven, but we had buns instead ;) Lettuce, tomato & cucumber, plus a bit of relish too :)

Oooh I am tempted to have a go at those, they look delish and we do have chilli peppers in the greenhouse 8-) 8-)

Kaz they were so deelish I'd happily have them any day, and they're much lighter-tasting than beef ones but still really satisfying.
I enjoy beef in all forms, but not very often, I find it a bit rich.

I have an old shelf tray from a mini-oven. It's about 28x18cm and 1cm deep. I line the bottom with greaseproof and plonk the burger meat in the tray then roll it out with a greased rolling pin. The burgers are cut out using a 10cm biscuit ring - perfect every time.

I am not a fan of chicken or turkey mice - too dry, but I reckon a good beef/pork mince would do the job.

With that recipe Wm they're honestly not dry at all, do give it a go if you spot bargain turkey mince ;)

Also meant to say I didn't have parsley so used some chopped basil leaves (always have a pot on the windowsill)

Oh I meant to say elsewhere, my basil has picked up hugely over the weekend! It must have heard me moaning about it as it's come on a gallop :lol: :lol: :roll:
