Blondies

I have baked something new this afternoon and they have been a real hit. Blondies, as opposed to Brownies! A Nigella recipe.

Really easy, and really nice.

200g porridge oats (not instant ones)
100g plain flour
1/2 tsp bicarb soda
150g soft butter
100g light muscavado sugar (except I used soft brown)
1 x 397g can condensed milk
1 egg
1 x 170g chocolate chips (I am going to try them with cherries next time. They would be nice with raisins too but DD1 doesn't like raisins).

Preheat the oven to 180 deg. Grease and line a cake tin. Line it with foil - makes it easier to get the blondies off.

Combine the oats, flour and bicarb in a bowl.

Mix together the soft butter and the sugar until pale and creamy. Beat in the condensed milk followed by the oat flour mix.

When well mixed, beat in an egg and into this pretty thick mixture fold in the chocolate chips.

Dollop into the baking tray, smooth it down and bake for 35 minutes.

When ready it will be quite a pronounced dark gold around the edges and will be coming away from the sides of the tin. It will look cooked on top though just beneath will seem squidgy. But it firms up in the tin as it cools. You need to take it out of the oven when it is slightly undercooked to get that nice chewiness to it.

Highly recommend it - my lot love it!

They do sound scrummy!!! I might try those next time I have both kids here 8-) :)

Oh I've had that recipe for ages and not remembered to buy the condensed milk, I must add it to the list.
I have a bag of craisins (dried cranberries), I imagine they'd go well too :)

I don't like chocolate as anything other than a bar - not as a drink, a cake, a biscuit - but they look as though they would be delish with fruit instead of choc chips.

It's the condensed milk: I have had a sort of love of it since dad used to use it to make our bedtime coffee. :D

I love cranberries, that's a nice idea 8-) I expect my two would prefer the choc chips though :roll: :lol:

You can't taste the condensed milk at all WM.

I am going to try them with dried fruit next.
