What to do with Ginger

I ordered some fresh ginger with my last Tesco order. I don't often buy it and for some reason wasn't expecting quite the amount I got considering I only ordered 60p worth... but I've got quite a bit and can't use it all in one go.

What - if any - is the best way to store fresh ginger? Grate and freeze it?

The stuff in jars tends to have oil. I think it would work best processed with a little oil, the frozen in ice cube trays - or just little dollops on a tray covered with geaseproof. Once frozen you can put it all in a bag.
That's how I do garlic & chillies anyway :)

I wrap it tightly in strong cooking foil and keep it in the crisper drawer - it lasts a few weeks ~3.

I also once tried this: http://www.instructables.com/id/Crystallised-Ginger/ I had to fiddle with the numbers but it turned out really well - both the syrup and the ginger.
