It's a Slimming World recipe, but surprisingly filling, and easily adapted to whatever veg you prefer. B and I really enjoy it.
6 eggs
2 large tablespoons of either cottage cheese, quark (*or any soft cheese)
A Frylight spray (or a little oil)
Red onion
Any diced veg - I used red pepper, mushrooms, halved cherry tomatoes, and peas
Optional - *a little grated cheddar and some sliced red onion prior to baking.
Fry the veg softly, using the oil or spray, until well softened. Pre-heat the oven to 180°. Whisk the eggs and cheese in a bowl, then add the veg. Pour into a greased or lined baking dish. Cook for 30 minutes. Delicious hot or cold.
