Crystalised ginger

I went looking for this in the supermarket (Sainsburys) this morning and couldn't find any.

What shelf is it likely to be on - I looked mainly in the baking ingredients aisle, next to the candied peel and cherries. They did have candied ginger but no crystalised ginger.

I have got some stem ginger in a sugar syrup though which needs using up. Do you think that will work in the ginger biscuits.

I usually get mine from Holland And Barrett Deb, I've never looked for it in the supermarket so can't help.
Maybe if you dry the syrup off the ginger it'll be fine, it's worth trying to use it anyway.

I'll nip into H&B later in the week.

Thanks Jo.

Yes Holland & Barrett, or Julian Graves if you have one.
Don't think the stuff in syrup would work tbh :?

I do not see why diced stem ginger would not work. It is half-way to crystallised ginger, it just needs to be drained from the syrup, dusted in sugar and then left to air dry in a warm place = crystallised ginger.

Yeah but by the time it's dried out she may as well go to H&B :D
It wouldn't make the biscuits as they're meant to be, by its nature ginger in syrup is wet and this recipe has hardly any moisture in it, they'd come out more like little cakes, I think :?
