Easiest fruit cake

Just made this so thought I would post the recipe; turn the oven on and by the time it's heated up it's ready to go in.

100g soft spread or softened butter
200g SR flour
75g caster sugar
200g mixed dried fruit
1 egg, beaten
175ml milk

Grease and line a 1lb loaf tin (I buy packs of parchment liners from the pound shop instead).
Oven 180c/fan160.

Put fat and flour into a bowl; use a fork to mash together till it's like breadcrumbs.
Add rest of ingredients, stir in well with a spoon.
Dollop into tin, cook 1 hour, test with a skewer.
Leave to cool in tin then turn onto wire rack.

how long does it keep Di? Personally I cannot stand fruitcake / mince pies (eeewwwww :oops: :D ), but I think my mom would quite like this so may be nice to make it before she arrives? or is it tastiest when fresh?

Not at all Ria, I made one last week, wrapped it in foil and it was still fine six days later :)
If it does get a bit dry either spread with butter or serve with custard :)

I wouldn't pretend it's the best, but definitely the easiest, and nicely fruity :)
