Salmon

I've bought two portions of salmon - frozen, not fresh.

Now then - how on earth do I cook it?

I asked Judy, my nice neighbour and she said to wrap it in foil, in the oven and add some fresh herbs and a squirt of fresh lemon.

Yes, I said, but that won't disguise the taste, will it? :oops: :oops: :roll: :lol: :lol: :lol:

Any thoughts please xx

Wrap in foil with a knob of butter, herbs and seasoning, and a sprinkle of lemon juice then straight in the bin. Cuts out cooking the horrible stuff. :lol:

Or...

Season both sides then fry in a pan with a knob of butter, turning once. Leave to go cold them mash it together with boiled potato and form into fish cakes. Roll the cakes in breadcumbs and cook them as you normally would.

They are not bad with coleslaw and salad.

Pan fry, skin side down first. Add a few chopped spring onions and a capful of white wine vinegar. Turn salmon over for a few minutes and then add some creme fraiche to make a nice sauce and a bit of dill.

Poach it, flake it then mix with cooked cubed potatoes and mayo/salad dressing and have with salad.
Or poach then mash with a touch of vinegar and/or mayo/salad dressing and have in a sandwich with cucumber :)

I find fresh tuna much 'meatier' and less fishy than salmon, and it's lovely barbequed, served with a big wedge of lemon :)

Do you remember the summer in Winter chicken recipe? Chicken, cherry tomatoes, pesto, cooked pasta, creme fraiche? I make that with salmon instead of chicken

The first time I ever 'spoke' to Debih on the DM boards it was to get this recipe from her. It's been a favourite in our house since. :D :D
