Homemade Hobnobs

This is the original recipe, from Delia's Book of Cakes, where she calls them ginger oat biscuits.
They have an enormous thread to themselves on moneysavingexpert where they are called Twink's hobnobs, though she does admit early on it's not her recipe ;) There are lots of ideas for variations on there but we always have them just as they come. They're the simplest biscuits in the world, and the best :)

110g butter or margarine
1 dessertspoon golden syrup
75g demerara sugar
110g self raising flour
110g whole jumbo or porridge oats
1 teaspoon ground ginger
Pinch salt

Oven 325f/170c/160 fan
Lightly grease 2 baking sheets.

Put butter, syrup and sugar in a small pan and heat gently till fat is just melted. Sift flour into a bowl, stir in oats, ginger and salt. Pour the melted mix in and mix thoroughly.
Take smallish blobs - about a good teaspoonful, roll into balls with your hands, put onto baking sheets and flatten a bit with either hand or a fork. Leave gaps as they will spread a bit.
Bake for about 10-14 mins, till golden brown (they will still be a bit soft).
leave for a few mins then cool on a wire rack.
I got 28 small ones out of it last night, it depends what size you want them, they don't grow a lot.

Additions: The recipe changed later, to include a dessertspoon of water with the butter etc when heating, and 1/4 teasp baking powder with the flour. I do it both ways and am never sure if there's any difference :)

Thanks so much Di - they sound delicious! :D I'll make a batch this week and Joe can have a go at making some over half term too, no doubt he'll enjoy making and eating them!

We were thinking that they could easily be made into chocolate hob nobs :P

Okay. The chocolate ones are lethal :oops: :lol:
