That's what I was thinking Saundra. We used to cut them diagonally, after taking the veins off the pods, and then serve them with a bit of butter and seasoning. If they were big ones we would cut out the "eye" and then cook them.... the shells would float to the top and be skimmed off.

Can you take the skins off if they are frozen from the shop?

Yes Weka - boil first ;)
We tend to have them in salads a fair bit, and they look so pretty all bright green :)

What I do Weka is just pour some water from the kettle on to them (in a bowl of course) and then just slip the skins off, then just use them in my recipe.

ah, thankyou. I use them in something (which i've currently forgotten what it is) that we all like, but we don't like the tough skins. I'll try that next time. I've got another bag in the freezer, so it must be on the menu soon. whatever it is....
