WW tomato and butternut squash soup

I've made a pan of this this afternoon and it is lovely (if a bit watery).

6 tomatoes
1 large carrot
1 butternut squash
2 red onions ( though I used normal)
1 stick celery (spawn of the devil)
4 cloves garlic
1 or 2 chillies

Chop all the veg into chunks. Chop the chillies and crush or chop the garlic. Put in a roasting tray and roast until soft, turning now and again (the recipe said 45 minutes but I had it in nearer 90 minutes.

Put it in a blender/processor with 500ml boiling water or stock. Blitz. Pass through a sieve so smooth. Add another 500 ml water. Bring to the boil.

What oven temp Debih?

I guess a lot would depend on the size of the butternut, they vary quite a bit don't they. Once in a while I see them cheap enough to buy, I'll remember to add the second lot of water slowly :)

You could thicken it up with some crème fraiche or yoghurt if you counted the points! Would make a lovely lunch 8-)

It had a red pepper in too - I forgot about that.

The recipe never gave an oven temp - I just did it on 180 deg.

I don't have any creme freche or plain yoghurt. I could use double cream instead. :lol: :lol:
