A kind neighbour popped round with some veg from his allotment the other day. There were some nice beetroot among the carrots and squash. I have never cooked beetroot before, so I had a look online and found a lovely recipe for beetroot Risotto...
just boil them till the skins peel of then slice them eat warm with pepper on them but love vinegar on them as well B used to grow loads when he had an alotment
