Vegetarian lasagne

Just looking online for a nice recipe. Found one that needs a pound of cherry tomatoes skinning, have I got time or inclination for that????? NO

Then found one that needed aubergines treating for an hour to remove the bitterness, have I got time or inclination for that??????? NO

So does anyone have an easy tasty vegetable lasagne please. I don't mind chopping, just don't fancy peeling, soaking etc

Delia's roasted veg one is nice.
I never salt aubergines - apparently older varieties might have needed it, but modern ones aren't bitter.
And just use a tin of tomatoes instead of all those cherry ones - or leave them whole :)

How about a semi traditional one, but with mixed beans instead of meat?

Soften chopped onions, celery and carrots, plus your herbs, then add the tomatoes (tin, passata or purée) and a veg stock cube and reduce the sauce. Season, then simply add a tin, or two, of mixed beans.

Build the lasagne and cook as normal.

I'm not sure I've ever used an actual recipe :? I just chop onion, celery, carrot if I have it, start those frying, then add eg peppers, courgettes, aubergine, maybe mushrooms. Add garlic, herbs, seasoning, tin tomatoes, cook till it looks/tastes nice.
Layer with the lasagne and put white sauce on top - I don't add white sauce to the layers, and often just make it in the microwave with cornflour. Grate parmesan all over and bake :)

That might have been better, didn't think of that, I am used to making a normal one. I have bought everything to do the Delia roasted vegetable one, but couldn't get capers, so will have to be without those
