Oooh, I may just try that Weka - that sounds delicious; I love pumpkin and all the squash family and have two left over because I ran out of time to carve them.

Well I finally got round to trying it last night; and can I just say delish doesn't do it justice. Admittedly I didn't have enough parmesan so added extra mature cheddar as well and I forgot about the pine nuts, but hey ho... it was super yummy! So thanks for posting - another meal to add to my list of favourites that are easy to make x
