What's for dinner?

I had three aubergines from the greenhouse, a ton of tomatoes almost on the turn, and the last onion from J's allotment so I'm making mousakka :shock: :D :D :D

Never made it before, but it's kind of like lasagne only with aubergines and spuds instead of pasta and lamb instead of beef mince - right????? :shock: :?

What could possibly go wrong???? :? :geek: :P :lol: :lol:

Before Di faints, I am following a recipe actually :D :lol:

I got paid today...in big fat cash euros so I'm taking Don out for a few beers and a takeaway. :D :D

He's been an absolute rock the past few days so he deserves them. x

There's a pub we go to in Birmingham that wraps bacon and cheese round a chicken breast then it goes in the oven with roasted peppers and baby tomatoes - I don't even bother looking at the menu as I have this every single time. :lol: :lol:

Tis too hot for a full blown Chinesey type takeway - a few pints of cold beer followed by campero and chips will hit the spot just fine. :lol:

Kaz I absolutely love moussaka, hope it was good but if not I can post ;)
Last night I made a really yummy veggie lasagne, with enough for tonight, and it was still good :D

Given your veg haul - dice selection of onion/red onion, courgette, aubergine, pepper, mushrooms if available, plus tomatoes; toss in oil and roast.
Tomato sauce - tin of, with oregano, garlic, olive oil.
Also either make white sauce (proper, or cornflour/microwave version), or use creme fraiche & parmesan.

Layer splodge of tomato sauce, then lasagne sheets. Mix rest of tomato sauce with roasted veg.
Layer of veg/tomato sauce mix, then thin layer of sauce, then lasagne, etc.
Finish with tomato/veg layer, then top with sauce & parmesan. Bake.

I've written this down now thanks Di - all those veggies are so fab and much loved in this house - I'm sure this lasagne will go down a storm. :D :D
