Our Portuguese dinner tonight

was inspired by Nizette, from our local cafe.

We often go down there lunch time ish - and as she does the cafe, now on here own, from 7.00 in the morning, until very late at night, we often catch her having lunch.

She always shares , with friends and often with us too x

The other day, she'd done a simple tinned tuna salad. And insisted we share with her.

So I tried to re-create it tonight - not quite the same, but almost ;)

On a bed of shredded lettuce, chuck on a jar of black eyed beans, a tin of tuna, diced cucumber, tomato and lots and lots of olive oil and vinegar.

Top with diced boiled egg and serve with plain rice.

Bluddy gorgeous - and so filling - and as Grumpy said, cheap :roll: :roll: :lol:

Oh, I could eat that, if it was tinned salmon instead of tuna and there was no olive oil or vinegar. :D :D :D
