I had the 'experimental' curry, (see random thered) and it was gorgemous. ;)

More veg than I remembered in the fridge, so it also had half a courgette and half a yellow pepper - didn't have the cabbage in the end, that really would have been veg overload :D

OK.

Chicken somethingorother.

Mustard and fenugreek seeds in mustard oil. Chopped onion in the oil, to soften, with chopped green and red chillies; then grated ginger and garlic, followed by the chicken. As it all cooks it gets powdered coriander, cumin, turmeric, red chilli powder and fennel. Now comes chopped fresh tomatoes, and the whole is rendered down. Top out with chicken stock, and as it reduces add some roasted cashews. Keep cooking and add some coconut milk and reduce till the sauce is fairly thick - almost dry.

It is very hot, not at all like a korma or kahari, even though it has the nuts.
