It's a Jewish thing :)
When I worked in London, for a long time it was for a Jewish company; a lot of the sandwich bars around were Jewish too.
Egg and (spring) onion, chopped up in mayo or salad cream was always on the list. I've had it, it is nice once in a while, and sometimes add finely chopped celery too, and a tiny touch of French mustard :)

When I came round from my lumpectomy, the nurse asked me If I wanted something to eat

Nurse - would you like something to eat
Me -yes please-nurse disappears
Nurse - I think we might have a sandwich
Me -that would be great-nurse disappears
Nurse - it's egg
me - lovely-nurse disappears
Nurse - its brown bread
me -thats fine-nurse disappears
Nurse - it's egg and tomato
Me - through gritted teeth - anything is fine. I was almost prepared to get the flipping thing myself

and I can still remember eating that egg sandwich, it was heavenly
