It's a Jewish thing
When I worked in London, for a long time it was for a Jewish company; a lot of the sandwich bars around were Jewish too.
Egg and (spring) onion, chopped up in mayo or salad cream was always on the list. I've had it, it is nice once in a while, and sometimes add finely chopped celery too, and a tiny touch of French mustard

Me - through gritted teeth - anything is fine. I was almost prepared to get the flipping thing myself

and I can still remember eating that egg sandwich, it was heavenly
