That was mum's rule for cooking chicken, and it always worked perfectly.

Mine didn't, but then you have to turn the oven ON! :oops:

I just went to chek on it and give it a basting at its, supposed, half way point..... :shock:

Good job I do not do the veg until the chuck is resting. :lol: :lol: :lol:

It will now be an evening meal. ;)

It was (eventually) gorgeous. :D

Chicken, roasties, carrots, sprouts, cauli, Yorkshires and lashings of thick gravy; all followed by hot mince pies and cold custard.

But, my goodness, there is so much curry and sandwich meat left that I might turn into a chicken once it has all gone.

Nooo.... they have to be squashed and put in a Boxing Day fried hash with other left overs and covered in gravy.

I am going tomake my own stuffing. Gotsome herbs whci I have chopped into tiny pieces with breadcrumbs, some onion and sausage meat.
It should be better than the packet stuff you can buy.
My mother used to make it and stuff the chicken with it so it was cooked inside the chicken asit roasted.
I am just having a chicken breast. May cut in openand put the stuffing inside. Will be having roast potatoes and brusel sprouts.
Wil let you know if I am successful
